@robertlasagna1 I'm no peater, but the raw carrot skin is filthy from the ground and transit. The skin has a lot of antifungal properties to protect the carrot underground in moisture. Vinegar will properly clean the porous outside. Vinegar has its own digestive benefits. And it's dressing.
