Despite heat distribution, high ceilings, insulation, misting, extraction and circulating fans, it is always above 105°F these days at the smokehouse. I’ve been to outdoor smokehouses in Texas where temperatures in the pits are always above 110°F.

Ray strongly recommended us to open a BBQ restaurant. He was a pioneer. A very caring person. But above all, he was a devoted family man. A few weeks ago, he was coming to our restaurant on a Monday while making a stop at DCA. We were unfortunately closed. Hasta siempre, hermano.
