Photo of my mom yesterday on her 91st birthday. She has prioritized diet and exercise her entire life. In the pool at least three times a week doing cardio. Hikes for miles on most days—can hike a lot of younger people into the ground. Sharp as a tack, currently writing a book.

@epicurious How about supporting sustainable agriculture instead? Last I checked, ruminants were an important part of our natural ecosystems—and giant fields of mono-cropped and fertilizer and pesticide ridden [insert lower protein and lower nutrient density plant crop here] were not. 🤔

Low carb diet immediately reverses fatty liver (40% of Americans) in almost no time at all, even without weight loss. I am a little bit angry that low carb is not already the standard of care for non-alcoholic fatty liver disease (NAFLD) but I will just add this to the list. 🙄

These gorgeous ruminants live in perfect symbiosis with grasslands, peacefully converting unusable cellulose on difficult terrain into highly concentrated protein and minerals, powered only by ambient sunlight and rainfall—all while sequestering carbon and generating topsoil. 💚

I look forward to the day when everyone realizes that eating 300 grams of glycemic carbs in 8 separate feedings every 2 hours of a 16-hour day [S.A.D.] displaces enough fat oxidation to lead to downregulation of fat metabolism and a state of relative exogenous glucose dependence.
