10 years ago i came off Job Seekers allowance to start Le Patissier supplying one coffee shop and a restaurant in Skerries.
Now with 20 staff and placed a 250k order today to automate one of our lines with a view to exporting in early 2024..Dream Big / Work Hard
Meet the team - Joe (14) is part of the delivery team & supports with reading the manifest, google maps etc. He swopped a 2nd year zoom religion lesson for a lesson on logistics, map reading, customer service, entrepreneurship and helping his Dad save his business!! 🤔

Going to ease ourselves back in to Le Patissier online soon…few die hards like our pecan pie and award winning lemon meringue tart… the white cremeux with a raspberry fluid gel centre is addictive, chocolate caramel cube, Paris Brest … Bring back the dessert trolley !!
So....based on this weeks feedback and the ongoing lock down I am thinking of going all out with a County DUBLIN delivery service 🚚... two vans (North and South) two men (father and son(s)) and one goal.. to bring the joy of handmade patisserie.... oh what to do !
Arrived at 0330 for 0615 FR / T1 flight…security queue is already thousands, I mean thousands long…. I ran Dublin airport for Aer Lingus in a previous life and I have never seen anything like it !

The Apricot cheesecake is made using Tipperary cream cheese, diced juicy apricots, apricot purée & has a fluid apricot gel centre sitting on a ginger biscuit crumb.. dipped in chocolate and then sprayed in chocolate… and yes I ate it all !

I am totally choked by the positive feedback from our deliveries last week. I am so proud of my team, my 3 children that helped deliver, my girlfriend for all the logistics prep, her nephew that turned on our eCommerce site straight after the industry closed on us... 🙏🙏🙏

Eldest lad gets a 2:1 & heads to do his Masters, his girlfriend celebrates her 21st (cake by yours truely), daughter submits her thesis masters in clinical nutrition, her boyfriend completes his first 4 12 hr nights in the Gardai and the hotels reopen !ife is good

The VIT C Hit
A little more technical than normal, white chocolate whipped ganache with orange zest, blood orange jelly with pomegranate centre. Dipped in a white chocolate bath and then spayed with a neutral glaze to give the look of an Orange 🍊
