So these are pre cut beef short ribs. Many say the tastiest cut of beef.
Lots of meat. These have been setting in the frig over night. A mustard binder and my modified Texas rub for a little extra flavor profile.
I will smoke with hardwood charcoal and apple wood low and slow.

My own rub of course black, sea salt, garlic, onion, smoked paprika, celery seed, chili powder and habanero….shaken, not stirred.

For Father's Day I got a Kamado Joe Classic 2 and have cooked thighs, wings, dogs and burgers. Tomorrow I will cook some St. Louis ribs. Looking forward to an attempt at low and slow over Jealous Devil chunk and a mix of apple and hickory chunks. They will marinate in goodness
Webber Smokey Mountain for the new users. An example of a fire set up. Some left over Cowboy Hickory Hardwood coals, a few fresh ones and I will dump 8 or 9 half grayed briquets on top of this apple and hickory in that wee pocket. This is more than enough for a 6 hour smoke at

Chicken prepped and sitting till about 3pm. Salted, olive oil and Meat Church ‘Gospel’ rub. Will smoke at around 250 for 2 hours and then finish on the grill.

Its been decided by the Mrs. The next cook on the Kamado Joe is to be wings! I am thinking I will use both diverters and cook them on the top racks at around 300 to around 165-170 internal. Should be fun. Can't wait for supper time.
