Over the last year I've shifted 3 stone, I wasn't feeling great about myself, so have really taken control of my health.
Slow and steady, enjoying good healthy food, meats, veg and fish but greatly reducing carbs from my diet...
I've not been this weight since my late 20's....
Proud of my son Rory, he's 12, and opted to cook steak, garlic mushrooms and chimichurri for his food tech assignment, this was his practice run..
How did he do?
Love cooking in this nice simple way... a beautiful cote de boeuf slowly smoking over silver birch...then finished with a quick sear...

I've lost 5st in 2 years, eating low carb and it works so well for me, enjoy delicious food under 20g carbs a day, never feel I'm on a diet, and never hungry.
The burger on the left is 6g carbs, on the right 30+ g. Love it that I can enjoy a tasty burger and still lose weight

A delicious herby sausagemeat stuffed Porchetta from my local butcher on the rotisserie with fat basted veg underneath, crackling nailed with salt, pepper and fennel...

Hey
@GreggAWallace
@JohnTorode1
would love an opportunity to prove you otherwise, BBQ has moved on leaps and bounds in the UK...perhaps you're not getting invited to the best bbqs...
Getting a few people asking about my weight loss, around 5st total in 2 years, I'm loving eating low carb and get to enjoy delicious food under 20g carbs a day, one on the left is 6g carbs, on the right 30+g. Love it that I can enjoy a tasty burger and still lose weight
Feeling really proud.
My Fundamentals of BBQ show is now available to watch on
@amazon
TV... 8 episodes are available..
Also made me realise how much weight I've lost...I was 5 stone heavier when we filmed this
I've managed to lose 2 stone since the autumn on the bbq diet.
Enjoying good quality fatty meat, fish, plenty of low carb grilled veg and salads, cutting out sugar and pasta, and hugely reducing bread and beer intake. More exercise.
Have so much more energy and feel brilliant.
When a mate who's handy with metal is on furlough and you have a plan in your head for your ultimate hearth setup, and he exceeds your design specifications, can't wait to cook on this rig, so many options... So exciting
This was sensational, bone marrow fondue... Melted bone marrow with garlic, Thyme and rosemary, taken up to 190c then tender morsels of fillet steak cooked in seconds... Enjoyed with

Hey
@JeremyVineOn5
I've just moved from bring an amateur to a professional bbq'er... I'd love to chat about this...
Plenty of great bbqers in the UK...my Countrywoodsmoke Facebook group has 30,000 members who would disagree with you and this outdated view
Great day at CWS HQ with
@davidflatman
and the Grewcock brothers, cooked up some epic food, including a
@MeatMattersltd
bone in ribeye which was so good
Massive night at CWS HQ... Cooked up 34 pizzas for our friends and neighbours who picked them up from our drive, profits going to nhs..all cooked in
@bushmanovens
Santorini wfo.
The brisket from
@MeatMattersltd
was stunning... Smoked in the
@Weberbarbecues
Smokefire at 140c in just over 8 hrs..beefier than a grain fed brisket, plenty juicy..give these a try, those who say a uk grass fed brisket is no good, might be surprised... RT if you fancy a slice?
In other news, Tesco have put in a big order for Food and Fire, so will be appearing on their shelves over the summer. It's gone for another big reprint....lost count of the number of reprints, 4 or 5 now...
The nduja in the new black pudding from
@duchycharcuterie
starts melting as it cooks and the spicy oil gets dramn up into the black pudding, this is seriously a piece of heaven...
Epic lunch, roast pork loin, crunchy crackling, juicy meat, grilled rhubarb and a tray of grilled veg, happy Sundays in the garden..
Hope you all having a good weekend?
So I've been assisting a major retailer and their supplier in their journey to bring real bbq to their customers, it's great to test and work with products that will help bring real bbq to the mainstream....
Exciting times...
These products will be hitting the shelves shortly
I've outgrown my cws hq bbq shack, I'm going to be moving my UK BBQ School business to Fordmore FarmShop
This will allow me to grow, teach more people, work creating sexy bbq content.
I'm going to do private bbq events for corporate teams to have a bit of bbq fun
Exciting times

So today was a bit of a learning day for me...I put some posts up ..coming from a negative place...thankfully I realised on reflection, and the odd nudge, that negativity isn't the way forward, and it's better to face things in life with positivity, love and light....

To lose the weight to the treetop challenge...the big one....
Well not only have i now smashed the weightloss...4st down so im now 19st...
And today i smashed my next challenge.
Treetop challenge done✅
With my daughter Elsie
Sometimes in life the default negative position is the easy option, but in these tough times positivity needs to really shine through, bbq in the UK is too easy to knock without doing the research..

I've been very fortunate to be able to build my hobby, to become a successful alternative career to my oil industry work.
And I say successful not in terms of money, or status, but in terms of the joy it brings to myself, and to those who I help to improve their bbqing. 1/2
Enjoyed the steak of my dreams last night, Galician rubia gallega from Basco, I've been on a journey to try all the steaks from the Steak Revolution film, and this was the final one...
Stunning ❤️🔥
So... I'd just like to take a moment to share this... Picanha (top rump) from
@gourmetbutcher
cooked with a little rock salt on the
@primogrilluk
just how I like it... Wish I could share a couple of slices with you

Please be very careful

@sat_jamesmartin
suggesting that it's OK for people to cook with charcoal indoors, in a domestic setting the extraction is not adequate for this, whatever charcoal is used...please consider retracting this dangerous advice
Too thick?
Now that's what I call a ham sandwich, cherry smoked ham very thickly cut and pan fried to warm up, melted cheese between the two pieces, American mustard and
@VadaszDeli
pickles...
Have a great weekend

Love my carbon steel knife collection... Most of these are antique Butchers and chefs knives I've picked up over the years, you probably recognise a few from my pics, not only do they look beautiful but they are kept razor sharp and used regularly... Which is your favourite?
Really focussing in on my physical and mental health... less focused on the scales as I'm doing more weights, one of the things I've noticed most is how many people say how "well" I look.. a combo of keto, exercise, fresh air and sunshine 🤗 whichever it is I'm keeping going ♥️🔥
Best Xmas day bbq ever, 10 years now, getting the hang of it I think?
Cherry smoked crown and ham, both glazed with mulling syrup, and a turkey drum for my eldest..
Merry Christmas folks
How has your Xmas bbq gone?

As its Burger day.. I'd love to hear the details of what makes up your ultimate burger, beef? Chicken? Veg? What bun? Toppings? I'm a fan of a good thick Butchers burger, melted plastic cheese, gherkins, chipotle sauce and that's about it, maybe a slice or two of crispy bacon..
This stunning rib was from my local butcher. Grass Fed, Dry aged for 36 days, Devon Beef. Cooked on Primo with red wine barrel and cherry smoke, finished with charcoal melted chimichurri butter... The first UK bbq school intermediate class since lockdown, really missed it..
Oh boy had I been looking forward to this dirty creation, the mcmelt... Kind of a fusion of a patty melt and a grilled cheese, heavenly, now I feel dirty, but happy.... Nice work
@meltaberdeen16
Hey
@MotzBurger
would love to see what you think of some of our burgers here in the UK. This was a beer steamed cheeseburger with caramelised onions, black pudding and beef bone gravy... Filthy good
Brisket really is the pinnacle of bbq.. So many beginners ask for advice how to cook a brisket.. But it needs working up to.. I cooked up this super juicy usda brisket from
@hixsonmeatldn
for a future vid.. Cws mocha rub and smoked hot n fast on

I hear time and time again how cooking outdoors helps so many of us when we feel low and gives a boost to our mental health, this has been more evident than ever the last couple of years.
I know myself its helped me immeasurably, over many years, and i feel very blessed
I really ought to know better at 49..
But YOLO..
I'm lighter, fitter and stronger than I've been in many years...so we'll see
Been a fair few years

Hey
@jamesmartinchef
loving your American adventure...but made me a little sad to see you boiling your ribs. I'd be happy to show you how to cook some like I do...
