I DID IT. Homemade duck prosciutto and it tastes AWESOME! Pretty salty, as it ought to be. Fennel, allspice, juniper, nutmeg, thyme, oregano, etc. crusting that outside. WORTH THE 2 WEEKS. Next up, chorizo??!
