On this day 27 years ago, a massive fire broke out at the Old Heaven Hill Springs Distillery in Bardstown. Over 92,000 barrels of whiskey were destroyed, but thanks to the hard work of our team and help from others in the industry, we were able to rebuild stronger than ever.

Distillers char the inside of their barrels at varying levels, ranging from Level 1 (15 seconds) to Level 7 (3.5 minutes) and beyond. Lighter char levels tend to produce more fruit esters and spice notes, while heavier char levels release desirable oak flavors into the spirit.

The Old Fitzgerald line is well-known for its distilling pedigree. First registered in 1884 by S.C. Herbst, it was sold to Julian P. “Pappy” Van Winkle who grew the brand after Prohibition before it eventually came to Heaven Hill. A new edition is released each fall and spring.

. We're honored to our historic wheated mashbill into the spotlight, known behind the scenes as "Old Fitzgerald Distillate," and it’s comprised of 68% corn, 20% wheat, and 12% malted barley.
Bourbon barrels must be made of oak, but the wooden bungs that keep our whiskey inside are made of poplar. Poplar is a softer wood, and ensures a tight fit.
A five time "Whiskey of the Year" winner, Evan Williams Single Barrel is specially selected by our master distillers to measure up to our exacting standards. Note its exceptional finish, which is long, graceful, and relaxed.
