Whole ribeye roast (prime rib) that we cooked to @ChefGruel 's recipe. It was the best I've ever had. I'll never eat prime rib at a restaurant ever again. The entire thing fed 20 people, plus leftovers, and only cost $173. Local organic beef.

Before and after Delmonico. So good I had to unlock to share. They dry brined overnight in Maldon salt. Smoked at 225F until they hit 125F, let them rest for 10 minutes then seared on cast iron in unsalted butter for 2 minutes on each side. Check comments for additional info.
