10 years ago, my Dad told me his bucket list wine was Château Lafite-Rothschild. Last night we got that box ticked for him w/ the amazing 1996 - the greatest wine either of us has ever had. Krug Grande Cuvée & 1997 Château d’Yquem were phenomenal as well. A special night indeed🤘
What people complaining about the prices at that Salt Bae restaurant are missing is that the price *is* the product. No one’s going there because they want to eat a gold-plated steak; they’re going there because they want to pay £800 to eat a gold-plated steak.

3.5kg dry-aged rib of beef from Belted Galloway cattle, salted & back in the fridge before going on the Kamado Joe at around 1pm. ‘01 Branaire-Ducru resting upright to allow any sediment to settle prior to being decanted. Roast Beef & Bordeaux, what a classic pairing.
One of my favourite things about living in Ireland is the phenomenal seafood. Crab claws the size of my hand (bigger than Trump’s), local lobster, fresh local potatoes & lashings of Irish butter. The simple things are often the best!
My new, hand-blown whiskey glasses have finally arrived from Germany and they are drop-dead gorgeous. Needless to say, these will be reserved for only the most exquisite of whiskeys.

I gotta say, it really irks me when fine dining restaurants don’t offer corkage. I’ve bottles that deserve better food than I can cook or that merit a special setting. I’m hardly gonna rock up w/ a bottle of Wolf Blass. I don’t care how high the corkage charge is, just have one!

The 1964 Marcarini Barolo Brunate is the best wine I’ve had in 2023 beating even the 1993 Domaine Leroy Pommard Les Vignots I had in June. Barolo is just a different animal when it’s >30 years old and at 59 years this bottle was absolutely singing with plenty left in the tank 🤘

So the Glenmorangie Signet is the real deal, folks. Chocolate for days along with leather, tobacco & potpourri. Very elegant and sophisticated. I’d heard this was good, but it far exceeded my expectations.
This evening’s soundtrack is LTE3. If you’re into instrumental prog, this record is f’ing INSANE. I’ll be listening to this for many years to come.

Waterford has set a high bar for new Irish distilleries. Other new distilleries coming on line will want to be seriously on top of their game. Distilleries whose only advantage over Waterford is the age of their stock will also want to take note and do a bit of self-reflection.
So I got this new cork puller the other day for opening older wines. Tested it on a couple younger bottles just to practice.
First time, I pushed the cork into the bottle! 😂
Second time was a success. I might be opening an older wine tonight so we’ll see how it goes!! 😬😬
The hype is real! We enjoyed this bottle over the course of the long weekend, and it was sensational - even better on Day 3 than Day 1. If you’re getting priced out of the top 1er & Grand Cru Burgundies, buy this if you can find it. A stunner!
Last night’s porchetta turned out great. Preceded by confit duck leg w/ honey & clove sauce from

’s recipe. I see the duck fat for the potatoes and also put some in the sausage, fennel & fig stuffing that went into the pork.
It occurred to me that in haven’t been drinking a lot of burgundy recently, so I this would be a good bottle to rectify that with. This is absolutely sublime. Purity, depth, intensity, focus and elegance. Magnificent!

Guinness vs Guinness 0.0. On first sip when nice & cold, close enough w/ slight sour note on the 0.0. As I got through them, they diverged a bit as the pints warmed w/ 0.0 losing out on mouthfeel & hint of that typical 0.0 sweetness on the finish. Overall, 0.0 is ca 80% as good.

I can’t overstate how fantastic these Josepinenhütte champagne glasses are. Best glass I’ve used for champagne yet. Of all the Josephinenhütte glasses I have, this is the one that’s the biggest jump over rival high-end glasses. Magnificent!
The 1993 Domaine Leroy Pommard 1er Cru Les Vignots represents one of my my profound wine moments ever. Stunningly complex with leather, cherry, strawberry, sous-bois, anise and game. Silky, satin texture and a finish that lasted forever. An ethereal experience all-around.

Two phenomenal white wines last night, both of which are headed straight to my Top 23 Wines of 2023 list. The sous-voile aged Savignin from the Jura’s Tissot was a liquid miracle and the PYCM Bourgogne made a mockery of Burgundy’s classification system outshining many a 1er Cru.
The 2019 El Nido is a bombastic behemoth of a wine. Not the style the cool kids are drinking these days, but it’s an absolute thrill ride; like being screamed at while having your head dunked in a vat of dense crème de cassis, cherry & any other dark fruit you can think of.🤘🤘🤘
